Uniforms must be clean and well-fitted. Undergarments should match the colour of the outergarments.

Chef - WHITE chef jacket, BLACK & WHITE small check or plain black pants, apron, skull cap / hat, non-slip safety shoes, sharpened knife kit, Hotelstaff timesheets.

Food or Beverage Attendant - Men's WHITE business shirt, black tailored trousers, long black tie, black fully enclosed leather shoes, long black socks, waiters friend, plain black name badge, Hotelstaff timesheets, note pad & pen. Aprons are provided by the client.

Barista - Men's BLACK business shirt, black tailored trousers, long black tie, black fully enclosed leather shoes, long black socks, waiters friend, plain black name badge, Hotelstaff timesheets, note pad & pen. Aprons are provided by the client.

Kitchenhand - BLACK Polo Shirt/T-Shirt (no logos), BLACK Tailored Trousers, BLACK Apron, Skull Cap/Hat, Safety Boots, Timesheets

Catering Assistant – BLACK Polo Shirt/T-Shirt (no logos), BLACK Tailored Trousers, BLACK Apron, Skull Cap/Hat, Safety Shoes, Name Badge, Timesheets

Personal Grooming

Pay attention to personal grooming habits. Ensure you maintain high levels of both grooming and hygiene.

HAIR STYLE - Keep hair neat & tidy. Long hair styles must be tied back with a matching accessories.

FACIAL HAIR - Faces must be clean shaven (no stubble). Beards and moustaches short & well-trimmed.

NAILS - To be clean, short and well manicured, no polish or false nails

MAKE-UP - Minimise make up and ensure neutral colours.

HYGIENE - Regular showering, brushing your teeth and using deodorant. Minimise strong scents.

JEWELERY - Wear minimal jewellery. Remove facial piercings and multiple ear piercings. Stud style earrings are acceptable. Watches & wedding bands are okay.

TATTOOS - No visible tattoos

Please follow staff entry details below. You will be advised if a large group check-in is required.

Enter through main entrance on Collins Street or via Flinders Lane.

Report to the concierge desk closest to Flinders Lane. You will be isued with an access pass. Please bring valid photo ID.

On arrival at concierge, you will need to complete BHP induction on an iPad which will take less than 10 Minutes (only on your 1st shift)

Please note - the venue is located in the Melbourne CBD. and parking is very expensive.

You will not be able to leave your shift to move your car except during designated breaks.

  1. Ensure you have a valid Responsible Service of Alcohol Certificate
  2. You will need to complete a refresher course (opens in a new window) every 3 years to keep your RSA current.

  1. Obtain a Food Handlers Certificate

Pay and Conditions

Pay and Conditions for this site are governed by the Hospitality Industry (General) Award 2010 [MA000009].

Pay Rates for casual classifications apply as a Monday-Friday, Saturday, Sunday and Public Holiday rates.

All team members must bring their own meals to be consumed during 30-minute, unpaid scheduled breaks if shift exceeds 6 hours.

Induction

You will need to complete BHP induction on an iPad which will take less than 10 Minutes (only on your 1st shift).

A second Trippas White Group induction will be caried out before starting which includes a walkthrough of the building and all the safety requirements.
